My 5 top quick and easy Recipes to make on the move…

So you’ve just read my blog ‘Top ten tips to keep fit while travelling…’ and you’re now on the way to a fit and healthy life, right? Brilliant! 

The prospect of keeping up with your healthy eating on the move is daunting, however with some simple, quick recipes you will be back into the swing of things in no time. These recipes are super easy for anyone to make! Even if you’re just starting out learning to cook.

So here’s my top 10 quick and easy recipes:

1• Fajitas – Who doesn’t love fajitas, super quick and you can eat them hot or cold. 

Ingredients (serves 1):

– 125g (per person) chicken / or meat choice / or bean selection for vegetarians

– Red / green / yellow pepper / capsicum

– Onion

– Seasoning – paprika, cumin, salt, pepper and chilli optional.

– Wraps 

(Alternatively for the budget conscious you can buy a fajita powder mix, normally around £1) 

– Optional Extras: Cheese, Guacamole, Sour Cream, Salsa

Recipe:

1. Cut your meat, pepper and onion into strips and fry off in a frying pan with a little bit of oil on a medium heat for about 10/15 minutes until cooked through. 

2. Add in your seasoning to flavour and leave to cook for a further 5 minutes. 

3. Whilst this is cooking, you can prepare any extras you may like. Grated cheese, sour cream, salsa, guacamole or anything else! 

3. Warm the wraps through in the microwave or oven. Normally take about 1 minute in the microwave or 3/4 minutes in the oven. 

4. Create your fajita wraps, layer your cooked fajita mix and extras into the wrap and tuck in.

2• Chicken and mushroom tomato pasta

Ingredients (serves 1):

– 125g (per person) chicken breast 

– mushrooms

– onion

– 50g any pasta (penne, shells etc)

– half a tin of chopped tomatoes 

– herbs: oregano, garlic, salt, pepper and chilli if wanted

– extras : cheese (parmesan / cheddar) 

Recipe:

1. Dice your garlic, mushrooms, onion and chicken and brown off in a saucepan with a little oil. 

2. Measure out your pasta and put it on the hob with boiling water. Cook it for roughly 20 minutes depending on what type you have. Check the back of the pack for timing or alternatively keep an eye on when it’s soft. 

3. Add required amount of chopped tomatoes to your chicken. I’d advise half a tin per person. Also add to this your spices and give it a good stir. 

4. Place a lid on your sauce and leave to simmer for 15/20 minutes stirring occasionally whilst your pasta is cooking. 

5. Drain off your cooked pasta, add your pasta to the sauce and stir it in. 

6. Serve your pasta. Add any extras you may like, cheese, spices etc.

3. Tuna Pasta

Ingredients (serves 1): 

– 1 Tin of tuna

– 50g Pasta of any kind

– Third of a tin of kidney beans

– Herbs: coriander, salt, pepper

– Olive Oil

Recipe:

1. Measure out your required amount of pasta and place on the hob in boiling water to cook for roughly 20 minutes. Depending on what pasta you have times may vary, check the back of the pack for times or alternatively check until it’s soft. 

2. Drain off your tuna and kidney beans and place into a bowl. 

3. Drain off your cooked pasta and add to the tuna and kidney beans. Mix together.

4. Add the chopped coriander, a drizzle of olive oil and salt and pepper to taste. 

4. Sweet and Sour Stir fry:

Ingredients (serves 1) 

– 125g meat of your choice or prawns

– red / yellow or green pepper

– onion

– mushroom

– 1/4 jar of Sweet and sour sauce (or any flavour sauce of choice) 

ALTERNATIVELY 

– Make a homemade sauce using soy sauce / worchestershire sauce, garlic and chilli. 

– 50g Rice

– salt / pepper optional

Recipe:

1. Dice your chicken and vegetables and brown off in a frying pan on a medium heat for 10 minutes.

2. Measure out your required amount of rice and cook on the hob in boiling water for 20/30 minutes. 

3. Add 1/4 of the jar of sauce and stir in. Leave to heat through for a further 5 minutes.

4. Drain your cooked rice off and serve with the stir fry mix.

5. Chilli Con Carne

Ingredients (serves 1):

– 150g beef / lamb / turkey mince or quorn mince

– Onion

– Red Pepper / Capsicum

– Half tin of tomatoes

– 1/3 Tin of kidney beans

– Herbs and spices : oregano, paprika, chilli, bay leaf, worchestershire sauce / or a chilli mix if on a budget

– Rice or Jacket potato

Recipe:

1. Place mince into a non-stick saucepan and cook on a medium heat, stirring occasionally until brown. Once browned, drain off the fat that has produced and place back on the heat. 

2. Dice pepper and onion and add to the mince, along with tinned tomatoes, kidney beans and spices. Leave to simmer for 30 minutes.

3. Measure out rice and cook on the hob for 20/30 minutes until cooked. 

4. Alternatively prick a jacket potato and place in the microwave for 10 minutes, before in the oven for 40 minutes on 190 degrees to cook. 

5. Serve and add cheese or sour cream on top if required.

All of these recipes can be made within 30 minutes and can be consumed hot or cold. Meaning they can be perfect for a packed lunch/dinner in a cool bag. They can also be made in bulk and stored in the fridge or freezer for following days.
